During the visit you will closely observe every stage of the handmade pasta production process which, for over five generations, has given each shape its own unique character.
You will learn the secrets to recognizing pasta that is good for your health and you will be shown the natural and genuine products used in its production
Workshop
The visit will begin with an introductory lesson on pasta. You will explore the differences between ancient grains and modern grains, learn the characteristics of gluten (with practical demonstration), and understand why gluten is considered an integral and fundamental part of the production process. Also, using the historic machinery of the time, you will witness the traditional stages of artisanal pasta production.The visit will then take you to the heart of the pasta factory to observe the production processand the drying of the pasta using the same historic machines from the 1950s.
